Quinoa salad with lemon


  • 2 dl (5/6 cups) quinoa
  • 1 tsp sea salt
  • 1 tsp curcumin
  • 1/2 tsp caraway
  • 4 dl (1 3/4 cups) water
  • 2 tsp bone broth powder
  • 1 dl (1/2 cups) pinenuts or almonds
  • 1 dl (1/2 cups) organic raisins
  • 2 tbsp extra virgin olive oil
  • Juice from half a lemon
  • Diced fresh parsley
  • Grounded black pepper

Rinse quinoa in a colander. Boil water, add salt, spices, bone broth powder and quinoa. Turn heat off and let simmer with lid for about five minutes. When quinoa is done, mix in seeds, raisins, olive oil, lemon juice and parsley. Taste and add lemon juice if necessary. Add black pepper, serve and enjoy with friends and family.
